Chicken and Couscous Salad

1 box garlic and olive oil flavored couscous
1 can of chickpeas ; rinsed
1 can of chicken breast ; drained
4 cups of baby spinach
1/2 cup of olive oil and vinegar dressing
2 small cucumbers quartered and sliced
1 jar roasted red peppers cut into slices
4 oz of feta cheese
1/2 cup each of snipped dill and scallions

prepare couscous as package directs. In a large bowl combine the couscous,chickpeas,chicken,spinach,dressing,and half the cucumbers, roasted red peppers,feta, dill and scallions. To serve, sprinkle with the rest of the cucumbers,peppers,feta, dill and scallions.
